Poppyseed Chicken

~ Family recipe shared by Cheri M, modified slightly from my experience
Ingredients:
  • 4 chicken (half) breasts (or 6 if you double the rest of the ingredients)
  • 1 large can cream of chicken soup*
  • 8 oz. sour cream
  • 1 stick margarine
  • 1 sleeve of Ritz crackers*
  • 2 T poppyseeds
* I originally found the recipe a little salty for my taste and use the low-salt variety of either of these ingredients when I make it - perfect. :)

Instructions:
Bake or otherwise cook chicken and cut into chunks or shred. In casserole dish, melt stick of butter. Add chicken and all other ingredients except for crackers. Bake uncovered at 350 for about 20 minutes or until heated through. Crumble crackers and add to top of casserole; bake another 5 minutes.

Notes:
I like it served with corn or salad or both and with more crackers on the side. Cheri writes that you can experiment with changing out the soup flavors for a different twist or use canned chicken to save time.
